Kaya (Egg custard)

Saw the recipe in the book.

The only additional steps is to get fresh pandan juice. I follow one of the recipe by blending pandan using TM and squeeze the juice through a cloth.

Put in eggs and sugar and let it cook itself while I read a book...

Ta da.. nice?

Mantou again

I got to fedup with the food bought from outside. The quality ceased too much I can't withstand more... $ paid not worth the quality in return. Don't even say the taste :P

Now, I can say that making mantou is so easy...

The hardest work is to make the dough. Though I would like to have some muscles, it was just too tiring to do it while taking care a child.

So wonderful we have machine to do the work!

I added Three Treasure powder. Basically the mixture of sesame seeds, wheat germs, seaweed. Easily found in organic sections.

Chicky Rice

Tried the chicken rice cooking with thermomix.

The ingredients



place basket into TM. Pandan to add aroma the rice.


..and chicken thigh in varoma. Little bit of oil from chicken thigh will drop to the rice while cooking.. hmmmm

The remaining of starch left after cooking rice. Very good for kids. The rice with less starch tastes light.


No photo for the steamed brocolli.. I just place them on varoma following the recipe. Good to go for a simple and quick lunch preparation :)

Muffins n mantou

Another day playing around with thermomix.

Thought of making muffins for son to bring to school. So assemble out stuff available in the fridge.

Pretty fast it mix up and the longest time was me scouping the batter into the cup.  One drawback is that there would be some batter left in the mixing bowl, cause were under the knife not easy to get them all out. On the other hand, cleaning up is very fast. Some liquid dishwasher and a spind, left only some cleaning with hands. If ordinary cake mixer, it would be easy to get all the batter out, but then cleaning freezes me....

I added prune and raisins. And substitute soy milk made earlier for milk. Look good? Well, it taste just nice :)

Oh o, what about breakfast? I thought perhaps better to have another food as breakfast. If not, he will have breakfast - muffin, morning snack - muffin, afternoon snack - muffin. Son might got fedup wo..
So, so, so... dig out some ordinary flour and wa la:

Added sesame seeds (first toasted 3mins using Varoma heat). Hmm.. very crunchy mantou indeed.
Comparing to norm or traditionally - knead by hand. Steam with wok and to monitor time. Need paper for mantou to "sit" and cloth lining on the steaming tray.

Using thermomix - knead with it and temperature setting to 37 deg C to help kick start yeast. When steaming, just use Varoma temperature setting and it will beep when done. Cool. I can do other activity while it's cooking. yeah :)

In one day, after lunch made muffins and before bed made mantou. Couldn't have made these by norm. I would be too tired to wanting to make them. Good thing I have thermomix now to help. haha..

Soy milk - take 2

Second time making soy milk following thermomix recipe.

Now, took 60g of soy bean to soak. After soaked, it will be approx double in weight.


Added a screwpine (pandan) leave when pulverised. They said, adding screwpine leave can reduce the effect of gout wo. The colour will be slightly green. I didn't pulverise enough, can still see bits of leaf.


Well, it turn out ok. Not so "grainy" as I thought by the look.

Still, I like the traditional soy milk. Straining out the liquid and cook slowly in gas stove. It would be less taste of bean.. oh when I have time next month then.

Porridge

This morning made porridge. Plain one with minced pork.

One good thing using thermomix to cook, is that the boiling foam won't spill out. It just stayed within the cover. And it is constantly rotating, I will not have to worry food burn at the bottom of bowl. So I can be moving around without fixation at the stove.

My aunty came this morning and thought I cook "thicken flour".  No teeth also can eat this. I followed the recipe in book and the ingredients were in estimation.

Went to a demo this afternoon, Henry said to use speed 1 and counter clockwise button. If want to have porridge with whole shape of rice, use gentle stir setting. Ooooo... got so many different texture of porridge to play with. Cool!

Some tips were shared, but alas, in on left ear, out on right ear. Remember only soy milk cooking tip. And making up cakes takes 1/3 normal time using thermomix. Well, to update again =)

Soy milk - first trial

Tried to make soy milk using thermomix the first time.

Mistakenly took 180g of soy bean to soak. Actually required 180g of soaked soy bean.
So it came out very thick. See this:

I follow the recipe and add cereal after blending. Was in hurry to go for work, so didn't took photo. wow, everything gel up and I had soy cereal for breakfast. The whole morning had soy taste in my mouth. hhahaha.
Will update again with second trial of soy milk - the correct way.

Steam fish

See thermomix in operation.. day 2

Hubby said want to steam fish wo.. so here it is:

He flipped through the recipe book, 3 steps nia.

1) set time 20mins
2) temperature select "Varoma"
3) lastly the speed rotate to "2"

Itu sahaja..

Next day, steam fish again. I took the fish and then hubby said, "Let me teach you..."

Wah, dunno how to cook also can cook la.

I was afraid the fish might not cook. Normally when using wok, a lot of hot steam came out and the area was hot.. then the fish is very well cook. A bit cooked than I expected. Next time going to try reduce the time to 18mins and see if the fish a bit softer. Will update then :)

Oh, suddenly realised we had a baked chicken thigh which was cold. So placing another layer in the Varoma to steam the chicken thigh on top of the fish. There was 6 mins to go...oh masih sempat. Good to the stomach having warm food :)

Lemonade

My second testing with a lemon. Making lemonade with the recipe book that comes with the thermomix. erm..page 112

In less than one minute:
1) making the sugar powdery - 3 sec
2) mix water, lemon - 3 sec

Hehe, actually only a few seconds to become like this:

 So many recipe in the book neh, 161 of them if I count accurately. Basic calculation, if I try one recipe a day, I'll be going 5 months on it, whew!

Azuki bean and barley

First use : cook Azuki bean and barley




Followed the instruction to grind them. Then add 1 liter water, set time, temperature 100deg C, then the speed.

Want a cup?
Mix of mushy and bits of grain

Next round, going to grind them more before cooking. Then it will be much more mushy, even no teeth can eat. Yaya, to perfect the 'skill' to make drink for Ah Kong (grandpa) when he's here.
